Chicken legs
1 kg
Smoked lardons
150 g
Mushrooms
250 g
Pearl onions
200 g
Red wine
500 ml
Butter
50 g

Method

Brown the lardons, then the chicken, in a heavy casserole.

Deglaze with the red wine, scraping up every brown bit.

Add the onions and mushrooms, cover and braise gently.
